Eating your veggies will be a little easier with this yummy broccoli soup. Growing up, broccoli had this certain stigma behind it, but it is packed with vitamins K and C and is also a great source of potassium and fiber. So go ahead and eat your greens! Ingredients:
1 tbsp extra-virgin olive oil
1 onion, chopped
1 clove garlic, crushed
500 gr broccoli, cut into small florets
750 ml stock
200 ml milk
100 gr cream cheese
1-2 tbsp lemon juice
salt, nutmeg
Directions:
Gently sauté the onion and garlic in oil. Sauté broccoli briefly, then pour in milk and stock. Bring to the boil and simmer on a low heat for 10-15 minutes.
If desired, remove a few florets from the soup for garnishing and purée the rest. Add stock as needed.
Stir in the cream cheese and season with lemon juice, salt and nutmeg. Pour into bowls and serve garnished with the florets.
